The Autumn harvest gives so much in the way of hearty produce. Winter squash, potatoes, apples, pears, etc. can often be kept with very little preservation work. Most will last a couple of months in an unheated room, 6 months or more in a root cellar.

For those of us without a root cellar or just wanting some quick meals or snacks on hand, preservation methods abound. We can freeze, dehydrate, ferment and can a multitude of tasty things.

Like last week when we talked about the herbal remedies. Don't feel like you have to preserve all the things. Preserve what will get used and leave the rest behind without guilt.
