Salad is a basis of many healthy lifestyles. Let’s face it – they’re filling, full of nutrition (usually), and whip up in a hurry. Salads are great for those of us looking for something healthy and quick during a busy week, perfect for those of us trying to make healthy food choices, and are the ideal way to use up fresh, local, raw vegetables so often in abundance during the spring and summer months.

Salads can be simple bits of torn lettuce, some other veggies, maybe some meat or nuts, and a bit of dressing. That is in and of itself an amazing meal; it can also get a little boring day after day for many of us. Salads can be so much more that if we desire and while today's lesson contains and recipes ideas – let your own creative spirit and taste buds rule this kitchen endeavor.

As you start looking at your garden, farmer’s market, grocery store, and foraging spots look for tasty ingredients to combine into a big bowl for a salad. Don’t forget to think about homemade dressing ideas and potential infusing of vinegar. There’s no right or wrong with a salad. If your family wants to toss together nectarines and radishes, go for it and see what happens.

The more often salads are made the more often they’re craved in my experience and that is a craving we can all feel good about giving into. So go for it – pile that bowl high with fresh, whole food ingredients and just see how well it makes a body feel.
